Understanding the Principles of Vacuum Drying

Let me explain some principles of vacuum drying. A common piece of knowledge is that in the high-altitude regions of Tibet, water can be boiled without reaching 100°C when using an ordinary pot. However, this water cannot be used to cook rice. Why is that? It’s because the air is thin at high altitudes, leading to a lower boiling point for water. Even if the water temperature doesn’t reach 100°C at normal pressure, it still boils. What causes this?

Relationship Between Boiling Point and Pressure

What is the boiling point of water related to? Simply put, the boiling point of water is proportional to the pressure at the interface (the surface where water meets the air). The higher the pressure, the higher the boiling point; the lower the pressure, the lower the boiling point. In more detail, when the partial pressure of water vapor at the interface (which can be understood as the proportion of water vapor molecules among all gas molecules) equals the saturated vapor pressure of water at that pressure (where all gas molecules at the interface are water vapor), the water boils. At high pressure, because there are more air molecules, the partial pressure of water vapor at the interface doesn’t easily reach the saturated vapor pressure, making it harder for water to boil. More water needs to turn into vapor to displace other air molecules. At low pressure, there are fewer air molecules, so fewer water vapor molecules are needed to occupy the entire space, allowing water to boil at a lower temperature.

Application in Industrial Production

In industrial production, we can utilize the principle of the low boiling point of water in a vacuum environment to accelerate the evaporation of moisture by using a vacuum to draw water out of objects. As far as I know, this technology is primarily used in the drying process of oil-immersed power transformers. In a vacuum environment, the rapid evaporation of moisture requires the absorption of a large amount of heat, which can cause the temperature of the entire chamber to drop instantly, leading to frost or ice formation. Therefore, vacuum drying environments require heating elements to maintain the temperature of the entire vacuum chamber within a certain range.
